Paige's Apple Crumble Pie

Ingredients:
- 1 unbaked pie pastry shell
- 5-6 medium apples, peeled, cored and sliced 1/4" thick*
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon lemon juice
- 1/2 teaspoon cornstarch or 2 tablespoons flour
For the topping:- 1/2 cup whole oats
- 1/4 cup all purpose or white whole wheat flour
- 1/4 cup + 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
- 1 stick cold butter
*Choose firm kinds like granny smith, fuji or honey crisp. You can use a mixture.
Instructions:
- Preheat oven to 450F.
- Line a 9" deep dish pie pan with the pastry shell.
- In a medium mixing bowl, mix together the oats, flour, and brown sugar. Using a pastry cutter or your fingers, cut or rub in the butter until the mixture resembles coarse bread crumbs.
- Place the crumble mixture in the fridge until ready to use.
- In a large bowl, mix together the apples, sugar, cinnamon, nutmeg, and lemon juice. Lay the apples in the pie crust and sprinkle over the cornstarch or flour.
- Remove the crumble from the fridge and sprinkle it over the apples.
- Place the pie on a cookie sheet, and bake at 450F for 15 minutes.
- Reduce oven temperature to 350F and bake for an additional 30-40 minutes, or until the top is brown. If the pie crust edge gets too brown before the pie is baked, cover the edges with pie crust protector or strips of tinfoil.
